The people behind Hildis
Hildis was created as a place to return to — for a cold beer, lunch after a walk, or a long evening with good food and wine. There is room here for everyday moments and life's celebrations alike.
Co-owner & restaurant manager
Mikkel grew up in Gørløse with Hillerød close by throughout his childhood. A trained chef, he has spent 14 years working as a chef, head chef and executive head chef at restaurants including Skipperhuset, Fredensborg Store Kro, Rungstedgaard and Krogs Fiskerestaurant.
At Hildis you will meet him in the dining room, where his eye for detail and kitchen experience become part of the guest's entire evening.

Co-owner & head chef
Mathias has seven years of experience in the restaurant industry and specialises in Nordic cooking with French techniques. The seasons set the direction, and the Danish potato has a particularly special place in the head chef's heart.
His food is recognisable and precise, but always leaves room for Hildis' own interpretation — such as the hand-cut tartare that brings together everything he values in the dish.
